About this Homemade Version of Danish Butter Cookie

Danish butter cookies are famous for their rich, buttery flavor and the way they melt in your mouth. Traditionally, these cookies are shaped into rings, pretzels, and other designs by piping the dough. However, piping can be tricky for beginners and requires a bit more skill. That’s why I’ve created a simpler version of these cookies that’s easy for anyone to make at home. Instead of focusing on fancy shapes, this recipe sticks to a basic cookie shape, so you can bake them quickly and without any fuss.

My goal with this recipe is to make sure it’s something you can easily enjoy with your family, especially if you’re baking for your kids. The focus here is on the taste and quality of the cookie’s texture, making sure it’s delicious and satisfying. If you feel like experimenting, you can try piping the dough into different shapes, but this recipe is all about keeping things simple and accessible for everyone. Whether you’re new to baking or just looking for a quick and tasty treat, these homemade Danish butter cookies are sure to be a hit!

How to Make Cake Flour

  1. Take one cup of all-purpose flour (Maida). (1 cup = 250 ml)
  2. Remove 2 tablespoons of the flour from the cup.
  3. Add 2 tablespoons of corn flour to the remaining all-purpose flour.
  4. Sieve or whisk the mixture at least two times to mix it well.
  5. Your cake flour is now ready! This blend of all-purpose flour and corn flour is what we call cake flour.

How to Make Danish Butter Cookies

Step 1: Prepare the Dry Ingredients

  1. Sieve the cake flour and corn flour together two times.
  2. Add the desiccated coconut to the sieved flour mixture and mix well (do not sieve the coconut powder). Set this mixture aside.

Step 2: Cream the Butter and Sugar

  1. In a mixing bowl, add the powdered sugar and unsalted butter.
  2. First, mix the butter and powdered sugar with a rubber spatula or your hand.
  3. Then, use an electric beater to beat the butter and sugar until the mixture becomes light and fluffy. Be careful not to overbeat; stop once the sugar is completely dissolved.

Step 3: Combine Wet and Dry Ingredients

  1. Gradually add the cake flour and corn flour mixture to the creamed butter and sugar.
  2. Mix or fold the ingredients using a rubber spatula. Avoid stirring in a circular motion. Instead, use a combination of cutting, pressing, and scraping actions to combine the ingredients.
  3. Once the mixture starts to come together, use your hands to form it into a dough. The dough will be slightly loose at this stage, but it will firm up when chilled.

Step 4: Chill the Dough

  1. Wrap the dough in cling/plastic film.
  2. Place it in the fridge for 20-30 minutes to firm up.

Step 5: Preheat the Oven

  1. Preheat your oven to 160 degrees C for 10 minutes.

Step 6: Shape the Cookies

  1. Line a baking tray with parchment paper.
  2. Scoop about 15 grams of dough for each cookie and roll it into round balls.
  3. Press each ball lightly to flatten it slightly.
  4. Place the cookies on the baking tray, leaving about 4 cm of space between each one, as the dough will expand during baking.

Step 7: Bake the Cookies

  1. Bake the cookies in the preheated oven at 160 degrees C for 25 minutes.
  2. After baking, switch off the oven and leave the cookies inside the oven for an additional 10 minutes with the power off.

Step 8: Cool and Store

  1. Remove the cookies from the oven and allow them to cool completely.
  2. Once cooled, store the cookies in an airtight container. These cookies will stay fresh for up to a week.
  3. Note: Shelf Life of danish butter cookies
  4. These Danish butter cookies will stay fresh for up to one week when stored in an airtight container at room temperature. If the cookies become soft, you can rebake them at a low temperature to restore their crisp texture. It's best to enjoy them within this time frame for the best flavor and texture.

Expert Tips for Danish Butter Cookies

  • Butter and Sugar Mixing: Be careful not to overbeat the butter and sugar mixture. Mix until just combined.
  • Handling the Dough: Avoid kneading the dough too hard. Handle it gently to maintain a tender texture.
  • Chilling the Dough: Don’t leave the dough in the fridge for too long. If it becomes too firm, let it sit at room temperature until it’s soft enough to shape into balls.
  • Baking Time for Batches: The first batch of cookies may take a little longer to bake. Subsequent batches usually bake faster, so keep an eye on them.
  • Oven Timing Variations: Oven times can vary by brand. Start with a minimum of 15 minutes, then check the cookies every 5 minutes until they are done.
  • Using Fresh Coconut: If you’re using freshly grated coconut, refrigerate it for 1 hour before mixing it into the dough to avoid excess moisture.
  • Cookie Size and Thickness: Baking times will vary if you change the thickness or size of the cookies. Adjust accordingly.
  • Smoothing the Dough Balls: Roll the dough balls smoothly to reduce cracks when baking. You can also skip the light press and leave them as round balls

Storage Instructions

  • Cool Completely: Allow the cookies to cool completely before storing to prevent them from becoming soggy.
  • Airtight Container: Store the cookies in an airtight container to maintain their freshness and keep them from absorbing moisture.
  • Room Temperature: Keep the container at room temperature. These cookies will stay fresh for up to a week.
  • Reviving Soft Cookies: If the cookies become soft over time, you can rebake them at a low temperature to absorb moisture and restore their crisp texture.

Serving Suggestions

  • With Tea or Coffee: Enjoy these Danish butter cookies with a warm cup of tea or coffee. Their buttery, crumbly texture pairs perfectly with hot beverages.
  • For Special Occasions: Serve these cookies during holiday gatherings or special occasions. They make a delightful treat for guests and add a touch of homemade charm to any event.
  • As a Gift: Package these cookies in a decorative tin or jar and give them as a homemade gift. They’re a thoughtful and delicious present for friends and family.
  • With Ice Cream: Crumble the cookies over vanilla or chocolate ice cream for an extra layer of flavor and crunch.
