Ingredients for Danish Butter Cookies
  • 100 g Cake flour (Refer cake flour mixture preparation below before proceeding to step by step instructions)
  • 10 g Corn starch/Corn flour
  • 20 g Desiccated coconut
  • 75 g Unsalted butter (At room temperature)
  • 50 g Powdered sugar
  • 1/4 tsp Vanilla essence
How to Make Cake Flour
  1. Take one cup of all-purpose flour (Maida). (1 cup = 250 ml)
  2. Remove 2 tablespoons of the flour from the cup.
  3. Add 2 tablespoons of corn flour to the remaining all-purpose flour.
  4. Sieve or whisk the mixture at least two times to mix it well.
  5. Your cake flour is now ready! This blend of all-purpose flour and corn flour is what we call cake flour.
  6. How to Make Danish Butter Cookies
    Step 1: Prepare the Dry Ingredients
  7. Sieve the cake flour and corn flour together two times.
  8. Add the desiccated coconut to the sieved flour mixture and mix well (do not sieve the coconut powder). Set this mixture aside.
  9. Step 2: Cream the Butter and Sugar
  10. In a mixing bowl, add the powdered sugar and unsalted butter.
  11. First, mix the butter and powdered sugar with a rubber spatula or your hand.
  12. Then, use an electric beater to beat the butter and sugar until the mixture becomes light and fluffy. Be careful not to overbeat; stop once the sugar is completely dissolved.
  13. Step 3: Combine Wet and Dry Ingredients
  14. Gradually add the cake flour and corn flour mixture to the creamed butter and sugar.
  15. Mix or fold the ingredients using a rubber spatula. Avoid stirring in a circular motion. Instead, use a combination of cutting, pressing, and scraping actions to combine the ingredients.
  16. Once the mixture starts to come together, use your hands to form it into a dough. The dough will be slightly loose at this stage, but it will firm up when chilled.
  17. Step 4: Chill the Dough
  18. Wrap the dough in cling/plastic film.
  19. Place it in the fridge for 20-30 minutes to firm up.

  21. Preheat your oven to 160 degrees C for 10 minutes.
  22. Step 6: Shape the Cookies
  23. Line a baking tray with parchment paper.
  24. Scoop about 15 grams of dough for each cookie and roll it into round balls.
  25. Press each ball lightly to flatten it slightly.
  26. Place the cookies on the baking tray, leaving about 4 cm of space between each one, as the dough will expand during baking.
  27. Step 7: Bake the Cookies
  28. Bake the cookies in the preheated oven at 160 degrees C for 25 minutes.
  29. After baking, switch off the oven and leave the cookies inside the oven for an additional 10 minutes with the power off.
  30. Step 8: Cool and Store
  31. Remove the cookies from the oven and allow them to cool completely.
  32. Once cooled, store the cookies in an airtight container. These cookies will stay fresh for up to a week.
